Granola Bars

Makes 24 bars
- 175g / 6oz butter
- 140g / 5oz clear honey
- 250g / 9oz demerara sugar
- 350g / 12oz porridge oats
- 1½ tsp ground cinnamon
- 85g / 3oz shelled pecans / walnuts
- 85g / 3oz pumpkin seeds
- 50g / 2oz ground almonds / desiccated coconut (especially good with the tropical fruits)
- 50g / 2oz sesame seeds
- 250g / 9oz mixed dried fruit eg Sun Maid "Fruit Bits" tropical variety or Asda "Taste of Hawaii" mix or whatever combination of fruits takes your fancy
Melt butter and honey, then stir in sugar. Cook over a low heat for 5 mins until sugar has dissolved. Bring to the boil for 1-2 minutes until thickened into a smooth caramel sauce. Mix remaining ingredients and stir in the sauce. Press into a greased and lined roasting or baking tin approximately 10" x 14" or 25 cm x 35cm and bake for 25 mins at 180°C / 160°C (fan oven) / gas mark 4 until lightly browned. Cool for 5 minutes and then run a knife round the edge of the tin to loosen. Cool and then turn out if you feel confident about this and then cut into slices, or cut first and lift the pieces out. According to the original recipe this makes 9 pieces but not even Fred could manage a chunk that size. I cut it into 24 bars.
